Celebrity Chef Ranveer Brar is set to make a flavorful mark on Dubai’s dining scene with the launch of his latest culinary venture, KashKan. This new restaurant, slated to open its doors on September 2, aims to strip away the extravagance of high-end dining and return to the roots of Indian cuisine – a journey of honest flavors and exceptional food.

KashKan, a portmanteau of “Kashmir” and “Kanyakumari,” two distinct regions of India, is Chef Ranveer Brar’s maiden foray into the Middle East culinary landscape. Brar’s aim is to provide an encompassing experience of Indian gastronomy, as reflected in the restaurant’s logo resembling a compass, symbolizing a culinary compass that guides patrons through the diversity of Indian fare.

“This venture is a canvas to celebrate India’s diverse culture,” Brar shares, emphasizing the potential for restaurants to act as cultural ambassadors. Brar’s philosophy is rooted in the belief that food is deeply personal, evoking unique memories and emotions for each diner. “I might trigger a memory, I might not,” Brar muses, acknowledging the subjective nature of gastronomy and his perpetual learning as a “disciple of food.”

Breaking from convention, KashKan’s menu defies stereotypes and showcases authentic flavors that steer clear of the usual dishes found in Indian restaurants. From warm hibiscus rasam soup to inventive tandoori platters, Brar offers an array of options that challenge palates. The main course stands out with offerings like Nagaland black sesame chicken, paneer makhani, and Nizami tarkari biryani, departing from the ubiquitous butter chicken. The culinary journey concludes with a hearty yet delectable gulab jamun cheesecake.

Situated on the first level of Festival City Mall, KashKan can accommodate up to 210 diners and features an outdoor section with waterfront views. The vibrant decor resonates with India’s lively culture, while private dining areas inspired by regional themes add a unique touch. A central bar showcases the preparation of desserts and drinks.

Chef Ranveer Brar, who hails from Lucknow and currently judges the Indian edition of MasterChef, sees Dubai’s appeal not in its glitz but in its diverse and embracing food culture. “More than being sophisticated, I think Dubai’s food culture is very embracing and that is what makes it beautiful for me,” Brar remarks, highlighting the city’s multicultural culinary pockets.

Brar believes that Dubai’s food enthusiasts are naturally attuned to diversity and culinary exploration, much like Melbourne’s multicultural community. As he enters the Dubai scene after more than four years, Brar recognizes the profound impact of the pandemic on the food industry but sees a resurgence in the sector. While KashKan may only scratch the surface of India’s vast culinary offerings, it aims to ignite meaningful dialogues about Indian food. With KashKan, Chef Ranveer Brar endeavors to showcase the authenticity and richness of Indian flavors, promising Dubai a memorable gastronomic journey.
