BEST WISHES FROM

-Priyadarshi Shastri | IMAWS (cbedit@imaws.org)

When we talk about a perfectly brewed cup of coffee, it is more than just a morning routine to many coffee lovers. It is an art made with creativity, precision and love for it. In India, the coffee culture has evolved drastically in the past 5-7 years with many new cafes and restaurants coming up. Even the younger generation has started looking at coffee as a new trend.

Alisha Shah- Co-founder of Gold by ICW

We cautiously match the grind size to the brewing method, ensuring that every cup achieves perfect extraction. Precision is key from controlling the water temperature to timing the brewing process. Each detail contributes to delivering a cup of coffee that’s not just a beverage but an experience. Our goal is to craft coffee that speaks to the soul with balance and aromatics, and is unforgettable, much like everything else we offer at our boutique.- Alisha Shah- Founder of Gold by ICW

Sohrab Sitaram, Co-Founder, First Coffee.

It’s all about the details. From sourcing the finest beans to grinding them fresh and brewing with precision, every step contributes to a memorable coffee experience. But it doesn’t stop there—at First Coffee, we believe the customer experience, from the way your drink is crafted to how it’s served, leaves an equally lasting impression.- says Sohrab Sitaram, Co-Founder, of First Coffee.

When it comes to coffee, the first is the foundation ie coffee beans. The quality of coffee beans plays a crucial role or say a deciding factor on whether coffee is good or not. Many coffee owners across the country like to source their beans for the coffee.

Shikhar Pattani, Founder of Coffee Verse says that Water forms most of the cup and then Coffee. The right water makes a lot of difference, along with temperature, extraction and water-to-coffee ratio.

Beans are the foundation of a perfect cup of coffee. Fresh, high-quality beans are essential for bringing out the optimal flavours and aromas. We source our beans directly from small-batch farmers and roasters to ensure that we’re getting the best possible beans. The type of bean, its origin, and its processing method all play a crucial role in determining the flavour profile of the final cup.- Sushant Rai, a City Barista from a cafe in Delhi, The Grammer Room

Rajat Agrawal, CEO, Barista Coffee

The beans are the soul of any coffee. The quality, origin, roast, and freshness of the beans directly influence the taste and aroma of the coffee. Fresh, high-quality beans make all the difference, and we’re very particular about sourcing only the best. Carry distinct flavor notes that can range from fruity and floral to nutty and chocolatey. At Barista, we prioritize sourcing premium beans and roasting them to perfection to ensure each cup delivers a consistent, delightful experience.- Rajat Agrawal, CEO, Barista Coffee

If the beans aren’t good, you can’t make a great cup of coffee, no matter what you do. We’re picky about the beans we choose; they need to be fresh and flavorful, and that’s something we strictly believe in. There’s so much variety out there, and finding the right beans that bring out those rich, vibrant flavours is the secret to a great cup. We love that every coffee tells a story through its beans, and that’s what makes it so exciting.- Paresh Desai, Founder- Laurel by Flavors

Sushant Rai believes that the perfect cup of coffee requires a combination of high-quality beans, precise roasting, accurate grinding, and a brewing technique that brings out the optimal flavours.

Sohrab Sitaram says that beans are everything—they’re the foundation of your cup. At First Coffee, we source our 100% Arabica, specialty coffee beans sustainably, ensuring quality while respecting the environment and the communities that grow them. This dedication to sustainability enhances both the flavour and the story behind every cup.

The beans are the driving force of each cup, the right source and the best-suited roast profile for the coffee bean make all the difference, Sohrab Sitaram, Co-Founder – First Coffee.

For any coffee lover, the process of making a coffee is something to be enjoyed. Right after choosing the right beans, the next step is grinding. Not many are aware that grinding too plays a making the perfect cup.

Grinding beans fresh makes a huge difference. The moment you grind those beans, all those oils and aromas are released, and that’s what gives the coffee its richness and flavour. If you grind ahead of time, you lose that freshness, and the coffee just doesn’t taste the same. Freshly ground beans mean you’re getting the full experience, the scent, the flavour, everything. It’s one of those small steps that makes a world of difference in the cup.- Mr Paresh Desai.

Yes, grinding the beans fresh just before brewing is crucial to enhancing both the taste and aroma. Grinding releases the essential oils and compounds that contribute to the flavour profile of the coffee. We ensure that each grind is tailored to the brewing method we use, as this directly affects the coffee’s freshness, aroma, and taste.- Parth Suri, Founder of Silk Road Coffee Company.

Shikhar Pattani says that fresh grinding makes a lot of difference. Think about a coffee bean as a shell holding flavours and aromas. As soon as you break it down, the aroma and flavours start to deplete. Also, the correct grind size makes a lot of difference in terms of how you want to extract the coffee. Hence an ideal grinder makes all the difference.

Grinding coffee beans releases their essential oils and aromatics, which are key to the coffee’s flavor profile. Freshly ground beans ensure maximum aroma and taste. At Barista, we grind our beans on-demand for each brew, preserving their full flavor potential and ensuring an unparalleled coffee experience.- Mr. Rajat Agrawal.

Sohrab Sitaram believes that freshly ground beans are key to a great cup of coffee. The beans themselves are packed with aroma, thanks to careful harvesting and processing techniques that preserve their unique profiles. At First Coffee, we’re also excited to soon launch retail coffee with different flavours and aromas to bring this experience home.

Once you’ve selected and ground your beans to the appropriate consistency, the next step is choosing the right brewing technique. At First Coffee, Sohrab Sitaram says a blend of tradition and technology is what you need to brew the coffee. Our Eversys machines ensure precision and consistency in every brew, while our team of skilled baristas brings a handcrafted touch. This tech-driven approach allows us to highlight the unique characteristics of each bean and deliver an exceptional cup every time.

Whereas Shikhar Pattan prefers using a Hario V60 pour-over to brew my coffee. For a change around I do prefer an Orea V3 sometimes. We primarily use an espresso machine, which allows for precise control over every aspect of the brewing process. This ensures optimal extraction, capturing the full spectrum of the beans’ flavours. For instance, when we use espresso, it’s all about intensity and a perfect crema. Regardless of the method, we focus on creating a cup that is balanced, aromatic, and deeply satisfying because every detail matters when crafting a memorable coffee experience.- Alisha Shah.

Mr Paresh Desai, Founder Laurel by Flavors

Additionally, French Press brewing has become a preferred choice for many brewers. French press brewing. There’s something about the rich, bold flavours and the velvety texture that just can’t be beaten. I love the ritual of slowly pouring the hot water over the grounds, waiting for the coffee to steep, and then pressing the plunger to separate the grounds from the liquid. It’s a sensory experience that never gets old. And, of course, the flavour is always incredible – full-bodied, with notes of chocolate and fruit. A French press will always be my first love when it comes to brewing coffee!- Sushant Rai.

At Barista, we use a variety of brewing techniques, tailored to the drink and the preferences of our guests. For espresso-based beverages, we rely on state-of-the-art espresso machines that deliver consistent pressure and temperature for a rich, crema-topped shot. We explore methods like pour-over and French press, which bring out nuanced flavors. Each technique is designed to highlight the unique characteristics of our expertly roasted beans.
